First Strawberry Pie of Spring!

Today we went to the produce stand in our small town and they were selling local strawberries for $10 a gallon.  That may be expensive, but they were so gorgeous that I knew they wanted to come home and become a lovely pie for my husband!
I set about making a sugar-free strawberry pie, competely from scratch.



Step one:  Make the filling
I am not a huge fan of the "goop" they call strawberry filling.  On top of it being filled with artificial dyes and flavors, it's not sugar-free.  So, I make my own.  The steps are as follows:
Boil strawberries, Stevia extract (I use Stevia In-the-Raw), and 1/4 cup of water until the strawberries are mashable.
Puree and allow to cool.



Step two: Make the crust, bake the crust

I use a very simple recipe: 1 cup flour, 1/3 cup shortening, 1 tsp salt, 1/4 cup cold water. (Approximately....when it comes together well you know you have enough shortening and water!)  Easy as pie!


Step three: Fill the pie

Self-explanatory.....and here it is:



....and let it chill in the fridge for a few hours.




We'll have a delicious slice after dinner tonight!
